Homemade Crepes with Pumpkin Syrup

Crepe recipe perfectly topped with a thick homemade syrup, perfect for a Fall breakfast.
  • Crepes:
  • 2 eggs
  • ½ water
  • 1 cup milk
  • ½ cup International Delight Pumpkin Pie Spice Creamer
  • 3 TBS butter or oil (not olive oil)
  • ½ tsp salt
  • 1 cup flour
  • Pumpkin Syrup:
  • 1 cup pure pumpkin puree
  • 1 cup brown sugar
  • ½ tsp vanilla
  • 1 cup water
  1. Crepes:
  2. Add all ingredients to a blender. Make sure all ingredients are incorporated and then cook individual crepes on a griddle.
  3. Pumpkin Syrup:
  4. Mix all of ingredients together in sauce pan. Bring to a boil over medium heat. Bring to a boil. Reduce heat to low and allow mixture to reduce for about 20 minutes being mindful that it doesn't burn. Cool completely before storing in the refrigerator.
