Summer Cooking: Crock Pot Taco Soup

I don’t turn on my oven during the summer at all if I can help it.

Luckily with a grill in the backyard and a handy crock pot in my kitchen, I don’t need to.

One of my favorite summer time recipes is Taco Soup.  It’s actually great year round, but I love it during the summer because it’s easy to make, doesn’t heat up my kitchen, and the cook time is flexible so it’s ready to eat when we are.   Plus, it’s quite hearty, so after a long day of swimming and expending energy it really hits the spot.

Here’s the recipe:

TACO SOUP

  • 1 lb. of cooked and seasoned to taste ground beef
  • 2 cans of diced tomatoes (my kids like the petite diced tomatoes the best for this recipe)
  • 1 can of rinsed and drained kidney beans
  • 1 can of rinsed and drained pinto beans
  • 1 or 2 cans of corn (I only use one can, but if you are a corn lover, definitely use 2)
  • 1/4 cup taco seasoning

Combine in Crock Pot and heat on low all day or on high for a few hours.

To SERVE, garnish with:

  • sour cream
  • shredded cheese
  • Fritos by Frito Lay (Frito-Lay Variety Pack, Selected Varieties $10.99 this week at Smart & Final){this is KEY!  No other chips taste as good in this recipe.  Trust me.  I’ve tried.}

  3. Looks delicious! And easy! I, too, hate using my oven in the summer but I rarely use the crock pot this time of year either. I don’t know why that is, though! I will have to try this!

      I am too, and it makes life lot easier for anytime of the year, especially if you are a busy person, and does not get the house hot..

  11. I don’t see any liquid being added. Does the tomatoes give off enough liquid to make soup?

  13. I made this yesterday and it was so yummy! I made it vegetarian with extra corn.
    My kids do not like tomato chunks, so I used tomato puree.
    I like mine spicy and added a little Sriracha.
