SOFT Pumpkin Chocolate Chip Cookies {recipe}

Pumpkin Chocolate Chip Cookies are pretty much my favorite cookies during the Fall.  I’ve been making this recipe for years because it’s so darn good.  I love that these cookies are super soft and have a ton of flavor.  My kids LOVE them too.  They don’t last long around here.  Be warned, this recipe makes 5 dozen cookies.  They are THAT good.  {{smiling}}

Ingredients
  • ¾ c. shortening
  • 2½ c. white sugar
  • 2 eggs
  • 1½ tsp vanilla
  • 1½ c. pumpkin puree
  • 3¾ c. flour
  • 1½ tsp. baking soda
  • 1½ tsp. baking powder
  • 1½ tsp. cinnamon
  • 1½ tsp. nutmeg
  • 1½ c. chocolate chips
Instructions
  1. Preheat oven to 375 degrees.
  2. In a separate bowl combine flour, salt, baking soda, baking powder, cinnamon and nutmeg. Set aside.
  3. In mixing bowl, add shortening and sugar, blend until creamy.
  4. Add eggs and vanilla, mix until creamy.
  5. Add pumpkin, mix until blended.
  6. Gradually add flour mixture.
  7. Add chocolate chips.
  8. Drop tablespoons full of cookie dough onto cookie tray. Bake for 12 minutes.
