One of my favorite things about Fall is baking, and some of my favorite recipes for the season have pumpkin in them. So, it’s no surprise that this week for Waffle Wednesday I came up with Mini Pumpkin Pies using Eggo® Waffles for the crust and that are perfect for entertaining! One of the nice things about this recipe is that you can use either Eggo® Homestyle Waffles or Eggo® Thick and Fluffy Cinnamon Brown Sugar Waffles depending on whether you want a more traditional tasting crust, or one with a more spice-filled flavor. These little goodies are the perfect size for a snack or a mini dessert and the flavor is just what you’d expect from a pumpkin pie, with the easiest crust ever!

Mini Pumpkin Pies {Eggo® recipe} Ingredients
- Eggo® Homestyle Waffles or
- Eggo® Thick and Fluffy Cinnamon Brown Sugar Waffles
- 15 oz can of Libby’s 100% Pure Pumpkin
- 1 can evaporated milk
- 2 eggs
- 3/4 cup granulated sugar
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
Directions {Step-by-Step}
Step 1: Preheat oven to 425 degrees. NOTE: The recipe for making the pumpkin pie portion of the Mini Pumpkin Pies comes from the can of Libby’s Pumpkin Puree for making “Famous Pumpkin Pie” filling.
Step 2: Follow directions for making pumpkin pie filling on can of Libby’s Pumpkin Puree.
Step 3: Let Eggo® Waffles thaw to room temperature. Cut down Eggo® Homestyle Waffles or Eggo® Thick and Fluffy Cinnamon Brown Sugar Waffles {depending on which ones you are using for your crust} by about 1/2″ so that they fit into regular sized muffin cup.
Step 4: Place Eggo® crust into muffin liner in muffin tin.
Step 5: Pour Pumpkin Pie mixture into Eggo® pie crust.
Step 6: Bake for 5 minutes at 425. Reduce oven temperature to 350 degrees and bake for 15 minutes.
NOTE: Baking times are not the same as on Libby Pumpkin Can!
Step 7: Garnish with whipped cream and candied pecan. Serve immediately.
