One of the things I love best about my home is the backyard. It’s big enough for the kids to be able to play in (without being too big to manage), and it’s perfect for summertime pool parties.

Of course, my pool parties never feel complete without some sort of snack like chips and dip, or fruit and veggies, and I’m always looking for new appetizer dip recipes (to eat with vegetables and chips) AS WELL AS tips for making outdoor entertaining simpler and more successful.

    entertainment tip – When gathering for a family picnic at your home or a cook-out have plenty of wipes available on the tables so people can sanitize their hands or clean up little messes of any kind. Have all foods prepared ahead of time and properly refrigerated, dont let salads that contain mayonaise , eggs or dairy products sit out for a long period of time. Have things for the kids to do as they get bored easily such as a box filled with coloring books/crayons, playdoh, blocks and the likes and having some background music from a boom box or radio playing sets the mood for a festive day.

    My favorite dip is a pyrex pie plate layer with the following: start at bottom and spread out 1-8-oz pkg of cream cheese, top with 1 can refried beans, top with 1 jar salsa and top with shredded cheddar cheese. Right before serving, microwave until cheese ontop melts.

    spinach dip is easy… 2 packages of frozen spinach (thaw), 1 tub of sour cream and 1 packet of onion soup mix. Make sure you drain the spinach, put in a bowl, add sour cream and soup mix and stir. Serve with triscuits or whatever you prefer.

    If you have a freezer (that isn’t attached to your fridge) start making ice the week before. You may end up with enough that you don’t have to buy any (depending on the size of the gathering and the room you have to store ice).

    A great refreshing summer dip for veggies: Lime Cilantro dip.20 oz Sour cream, 3 cups aprox cilantro leaves, juice of one lime, green onion to taste (I use only three spears, but you can add more). Throw it all in a blender and hit the button. Easy peasy

    My favorite chip dip- 1 (16 ounce) container of Sour Cream
    1 envelope of Parmesan Italian or Italian Dressing Mix
    Mix ingredients until well blended; cover.
    Refrigerate several hours to blend flavors.

    my friend used to make this thing…
    take a pyrex dish…
    bottom, cream cheese… then beanless chili (can) then shredded cheese… then pepperoni/tomatoes/green onions, whatever you wanted on top…
    put in oven, then get fritos to dip it in!

    I don’t know if it is an original idea but its pretty cool. I did it once this summer and loved it. Buy a bunch of glow sticks and go to a lake, creek, etc at night. Make sure you have a few plastic bags. Take the glow sticks and break them into the bags by color, then get a bunch of rocks that will skip across the water and put them into the bags. Give the bags a good shake and have fun skipping glowing rocks across the water.

    One of my favorite easy dip recipes is Pizza Dip:
    Spread 8 oz cream cheese in bottom of glass pie pan. Top with some pizza sauce, cheese and any pizza toppings of your choice. Pop in the microwave until cheese is melted. I like to serve with Frito Scoops.

    Here is my fave recipe for Red Pepper Dip!
    Ingredients

    1 (7 ounce) jar roasted red peppers, drained and diced
    3/4 pound shredded Monterey Jack cheese
    1 (8 ounce) package cream cheese, softened
    1 cup mayonnaise
    1 tablespoon minced onion
    1 clove garlic, minced
    2 tablespoons prepared Dijon-style mustard

    Directions

    Preheat oven to 350 degrees F (175 degrees C).
    In a small baking dish, mix the roasted red peppers, Monterey Jack cheese, cream cheese, mayonnaise, onion, garlic and Dijon-style mustard.
    Bake in the preheated oven 20 minutes, or until bubbly and lightly browned. Serve warm.

    Sausage-Chili Dip

    Nonstick cooking spray
    8 ounces bulk mild or hot Italian sausage
    2 15-ounce cans chili without beans, undrained
    8 ounces American cheese, cubed
    1 cup bottled salsa

    Coat the inside of a 3 1/2- or 4-quart slow cooker with cooking spray; set aside. In a large skillet cook sausage over medium-high heat until meat is brown. Drain off fat. Stir in undrained chili, cheese, and salsa. Transfer sausage mixture to the prepared cooker.
    Cover and cook on low-heat setting for 3 to 4 hours
    Stir well. Serve immediately or keep warm, covered, on low-heat setting for up to 2 hours, stirring occasionally.
    If desired, sprinkle dip with green onion. Serve with chips and/or sweet pepper strips.

    1 Can Crushed Pinneapple
    1 Red Onion
    1 Bunch Cilantro
    1 Jalapeno
    Finely chop the red onion and cilantro, add to the crushed pineapple. Roast the jalapeno in a frying pan, when browned and jumping finely chop and add to mixture. Serve with any type of corn chip!!! I bring these to every party and everyone loves it. I also make one without thejalapenos for those that prefer non spicy. Both are delicious.

    Alicia’s Famous Crab Dip (with apologies to my stepmom who I stole it from)
    1 cup mayo (Hellman’s or Best Foods)
    1 container sour cream (Daisy or Knudsen)
    1 pkg Knorr Vegetable Dip or Spring Vegetable Dip
    2 cans crab, thoroughly drained
    mix all ingredients together and put in the refrigerator overnight to set up.
    when ready to serve, stir again, and serve with plain tortilla chips.

    One of my favorite dips is Beer Cheese in a Bread Bowl
    Ingredients
    1 round loaf (1 pound) pumpernickel bread
    2 jars (5 ounces each) sharp American cheese spread
    1 package (8 ounces) cream cheese, softened
    1/4 cup beer or nonalcoholic beer
    1/2 cup real bacon bits
    Directions
    Cut top fourth off loaf of bread; carefully hollow out bottom, leaving a 1/2-in. shell. Cube removed bread; set aside.
    In a microwave-safe bowl, combine cheese spread and cream cheese. Microwave, uncovered, on high for 2 minutes, stirring every 30 seconds. Stir in beer. Microwave, uncovered, 20 seconds longer. Stir in bacon.
    Fill bread shell with cheese dip. Serve with reserved bread cubes. Yield: 2-1/2 cups.
