Mini Cheese Ball Ingredients

Ingredients

  • Lucerne® Monterey Jack Cheese, 1/2 cup grated
  • Lucerne® Cream Cheese, 8 oz., softened
  • Bacon, cooked and crumbled
  • 1 tablespoon Worcestershire Sauce
  • Mini Phyllo Pastry Shells
  • Pistachios, chopped
  • Dried Cranberries, chopped
  • Pecans, chopped
  • Italian Flat Leaf Parsley, chopped
  • Chives, chopped

Directions {step-by-step}

Step 1:  In a mixing bowl, beat cream cheese until fluffy.

Step 2:  Freshly grate 1/2 cup of monterey jack cheese, add.  Tip: Freshly grated cheese will stick better in the recipe than the store bought shredded cheese.

Step 3:  Chop 1 1/2 tbls. of chives, add.

Step 4:  Add 1 tbls worcestershire.  Mix until well blended.

Step 5:  Use a small cookie scoop to form balls with the cheese mixture.  Place on wax paper. IMG_4878a Step 6:  Roll mini cheese balls in topping choices that include crumbled bacon, chopped parsley, chopped pistachios and chopped dried cranberries and pecans.  At this point you can refrigerate them until it’s time to serve.  When ready to serve place in phyllo cups.IMG_4885b Here’s another way to cook with Lucerne® Dairy Farms products.  You can also visit Lucerne’s Pinterest board for some more recipe ideas.

Baked Cheese and Bacon Jam Bites
Cuisine: Appetizer
Prep time:

Total time: 
Serves: 15 mini cups
 
Crispy bite-sized shells with a warm, creamy and savory mix of cream cheese and melted jack cheese topped with smokey bacon jam.
Ingredients
  • 1 box (15 mini cups) Safeway SELECT® Mini Phyllo Cups
  • 4 oz (1/2 box) Lucerne® Cream Cheese, softened
  • ½ cup Lucerne Monterey Jack Cheese, shredded
  • 8 slices Safeway® Farms or Safeway SELECT Bacon
  • ⅓ cup Safeway SELECT Apricot Preserves
  • 2 tbsp Safeway® Kitchens Apple Cider Vinegar
  • Fresh thyme, for garnish (optional)
Instructions
  1. In a microwave or large skillet, cook bacon until crisp (drain fat), then allow to cool before cutting into pieces. Set aside.
  2. In a small sauce pan, heat and mix apricot jam and vinegar over medium heat until well combined. Next, stir in bacon and bring ingredients to a rolling boil. Once this is reached, reduce flame to low and simmer for 5 minutes. This will create the bacon jam used later in step 5.
  3. In a medium mixing bowl, combine cream cheese and shredded jack cheese with a mixing spoon.
  4. Spoon a teaspoon of cheese mixture into each phyllo cup. Press down a bit to flatten.
  5. Top each cup with a dollop of bacon jam.
  6. Baked at 350º for 7 minutes or until bacon jam just starts to lightly caramelize.
  7. Plate and serve, garnishing with a touch of fresh thyme if desired.

Peppermint M&M’S® Pretzel Sticks

  • White Chocolate Peppermint M&M’S® available at Target
  • 1 bag of Wilton Candy Melts or white chocolate chips
  • 1 bag Pretzel Rods
  • Holiday Sprinkles

Directions: Peppermint_pretzel_sticks_dip 1. In microwave safe dish, melt candy melts or white chocolate chips in 15 second increments, stirring at each interval. Peppermint_pretzel_sticks_dipped 2. Pepare brownie mix according to package directions and add mint extract. Pour over sugar cookie layer. Sprinkle with semisweet chocolate chips. 4. Bake at 350 degrees for 25-30 minutes. Cool. 5. BAKING and eating and deciding what recipes ideas I want to make next have got to be on my TOP 10 list of favorite holiday pastimes! I can’t stay away from the recipes that are begging to be baked and one of them is this Raspberry Chocolate Poke Cake. Have you ever had Poke Cake? You probably have and may not have known it. There are tons of variations of Poke Cakes. Basically, it’s a cake that has holes poked into it after it’s been baked so that you can drizzle something sweet over the top of the holes thereby sealing an extra special something into the cake ensuring moisture like you wouldn’t believe. All of those “better than….” cakes? Poke Cakes. This Poke Care recipe is a variation on a Poke Cake recipe that uses White Chocolate Raspberry Creamer by International Delight® to add moisture and the chocolate raspberry flavor.

Here’s what’s to like about the recipe: it’s so incredibly moist that you might have a hard time sticking to just one piece. It tastes delicious and looks lovely all made up, so it’s a great cake to take to holiday gatherings. If you are short on time and don’t want to make the frosting, just use Cool Whip instead.


Raspberry Chocolate Poke Cake Ingredients

Cake

  • White Cake Mix
  • 1/2 cup International Delight White Chocolate Raspberry Creamer®
  • 1/2 cup milk
  • 1/2 oil
  • 3 eggs
  • 1/2 melted butter
  • 1/2 cup melted semi-sweet chocolate chips
  • 3/4 cup sugar
  • 1 (14 oz) can of sweetened condensed milk

Frosting

  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1/2 cup whipping cream
  • 1 tsp vanilla

Raspberry Chocolate Poke Cake Instructions

1. Preheat oven to 350 degrees. Grease a 9×13 rectangle cake pan.

2. Add cake mix, creamer, milk, oil and eggs and mix well. Pour into cake pan and bake for 20-25 minutes or until a toothpick comes out with a few crumbs. Allow cake to cool.

3. Melt butter and chocolate chips in a microwave safe dish. Add sugar and mix together. Microwave for a few seconds at a time, stirring in between to disolve sugar crystals. Mix in can of sweetened condensed milk.

4. Poke holes in cake once it’s cool and pour butter/sugar/sweetened condensed milk mixture over the cake.

5. Refrigerate for several hours.

6. Once the cake is COLD, make the icing. Cream the butter. Add the half of the powdered sugar and mix until smooth. Add whipping cream and vanilla and combine. Add remaining powdered sugar and beat until fluffy. Sprinkle chocolate chips on the top if wanted.

7. Frost cake. Sprinkle with chocolate chips.

8. Serve and Enjoy. This cake is RICH!

There’s no better time than the holidays to bake and make fun treats that taste extra yummy!  At least, that’s my motto.  Lucky for me, my kiddos are on board with this sentiment and this month we decided that peanut butter and chocolate would be our theme.  We made Graham Cracker Houses using Skippy Peanut Butter as the glue and lots and lots of chocolate {hey, we wanted to use up that left over Halloween candy}.  We also made Peanut Butter Bars because I wanted an excuse for my kids to taste my favorite school treat.  {{smiling}}  And, because this season is all about giving, I’ve included the recipe below.  {{I’m all about Easy Baking Ideas!}}

Peanut Butter Bars

The holidays always make me nostalgic and peanut butter bars always remind me of my childhood.  I always, and I mean always, bought hot lunch on the day that the cafeteria served peanut butter bars with lunch.  My husband did too.  They were just so good.  I’m pretty sure that our parents didn’t realize that we were being served knock off Reese’s Peanut Butter Cups!  Yummy.

Peanut Butter Bar Ingredients

1 cup butter

1 cup Skippy peanut butter

2 cups Honey Maid Graham Cracker crumbs

2 cups powdered sugar

Topping:

1  1/2 cup semi-sweet chocolate chips

5 Tablespoons Skippy peanut butter

Peanut Butter Cup Instructions:

1.  Melt butter and 1 cup of peanut butter in sauce pan over medium heat. Mix in graham cracker crumbs and powdered sugar. Mix until well blended.

2.  Press into ungreased 9″x 13″ or 8″x 8″ pan.

3.  In microwave safe dish, melt chocolate chips with 4 Tablespoons of peanut butter and spread on top of peanut butter bar mixture.

Graham Cracker Houses are super fun to make and even funner to eat.  They make a great treat when you use Skippy peanut butter as the glue because that house isn’t going to hang around long.  Grab some Honey Maid Graham Crackers for the walls of the house, some Skippy Peanut Butter for the “glue”, chocolate candy for the “foundation” and decorations and you’ve got yourself a fantastic project to do with your kiddos!

You should know that there is no exact science to making a Graham Cracker House, but what you do need is the ability to get a little messy and to roll with the punches if your house tilts, slides or otherwise moves in ways you don’t want it to.  {{smiling}}

How to make a Graham Cracker House:

1.  Grab 6 Graham Crackers and assemble them as you see, leaving two full lengths for the roof, two with a quarter cut off for the sides and two with triangles cut off the top for the front and back.

2.  Assemble the house with Peanut Butter.  The more the better in my opinion.  Use candy to line the perimeter of the house for support!

We make the holidays the #BestTimetoBeaKid with some serious baking.  All of my kiddos love to help in the kitchen, especially my boys.  Baking cookies to give to friends and neighbors is a special tradition we don’t miss during the holidays. It’s a great way to make memories together while learning about acts of service.  It’s such a beautiful thing!

One of the things I love most about this time of year is FUDGE! One of the best things about fudge is that just about everyone loves it, and it makes the BEST friend and/or neighbor gift. Plus, there are so many ways you can make fudge variations for a sweet palette adventure. I adore gingerbread, and wanted to experiment with making an EASY Gingerbread Fudge Recipe so I pulled out my Gingerbread Latte Creamer by International Delight and voila, this recipe was born. It’s creamy, sweet and just plain delicious. Here’s what’s to like about the recipe: it’s super easy to make, it only uses a few ingredients and the gingerbread crumbles on the top add a nice texture and spice that makes it extra delicious. I highly recommend this recipe for gift giving! Don’t forget to download and print out the FREE printable, too!

Gingerbread Fudge Ingredients

  • 2 cups granulated white sugar
  • 1/2 cup butter
  • 3/4 cup Gingerbread Latte Creamer by International Delight
  • 10.5 ounces white chocolate almond bark (chopped into small pieces)
  • 1/2 teaspoon of nutmeg
  • (1) 7-ounce jar marshmallow creme
  • 1 cup of finely ground ginger snaps

1. Line an 8 or 9-inch square pan with foil and let it hang over the sides. Spray with non stick spray.

2. In a saucepan combine sugar, butter and creamer. Bring to a boil, stirring constantly. Continue boiling 8 to 10 minutes over medium heat or until a candy thermometer reaches 234°F, stirring constantly to prevent scorching. Remove from heat.

3. Using a wooden spoon, work quickly to stir in chopped white chocolate and nutmeg until chocolate is melted and smooth. Stir in marshmallow creme. Beat until well blended and then pour into prepared pan. Top with ginger snap crumbs. Let stand at room temperature until cooled. Refrigerate if you’d like to speed up the process.

4. When completely cool, cut into squares. Store in a covered container.

How to Make an Overnight French Toast Casserole is pretty darn simple.  The best part, of course about overnight casseroles is that all the prep is done the night before so in the morning all you have to do is pop the casserole in the oven and serve.  The great thing about this Recipe is that is makes great left overs.

Overnight French Toast Casserole Ingredients

  • 1 loaf cubed French Bread
  • 3 TBS granulated sugar
  • 1 TBS cinnamon
  • 1/2 cup brown sugar
  • 1 cube butter (1/4 cup)
  • 3 TBS light corn syrup
  • 8 oz. cream cheese
  • 2 cups of International Delight® French Vanilla Creamer
  • 6-8 eggs, depending on how eggy you like your casserole

Directions {Step-by-Step}

Step 1:  Melt corn syrup, brown sugar and butter in sauce pan over medium low heat.  Stir constantly.

Step 2:  Pour into the bottom of a 9×13 casserole dish.

Step 3:  Cut a loaf of French bread into bite sized pieces.  Cut cream cheese into small cubes.  {You want to make sure they are small enough to spread all over the casserole.}

Step 4:  Place bread cubes/pieces over butter/sugar mixture in the 9×13 dish.  Evenly distribute cream cheese cubes over the bread.

Step 5:  Whisk eggs together and then add the International Delight French Vanilla Cream {or get creative and use another flavor of your choosing}, mixing together well.  Pour over bread, covering completely.  Press down to make sure bread pieces are completely “wet”.  Sprinkle with cinnamon and sugar mixture.  Cover and refrigerate over night.

Step 6:  Bake uncovered at 350 degrees for 40 minutes or until golden brown and bubbly.

How to make a Dorothy Costume is an easy craft that’s perfect for dress up and Halloween costumes!  I do not claim to be a seamstress by any means, but if you can sew a straight line like me then you can definitely sew this costume.  All you need is a plain white t-shirt, blue gingham fabric, sewing machine, elastic and pins.  I guarantee your child will be skipping with delight in this Dorothy Wizard of Oz costume!

Materials Needed for Dorothy Costume

  • Blue Gingham Fabric, 1-2 yards
  • Pins
  • Elastic
  • Sewing Machine
  • Iron
  • Note: Fabric, pins and elastic were purchased from Hobby Lobby.

Step-by-step Directions

Step 1:  Cut fabric in half lengthwise.  (I bought 2 yards of fabric and cut the entire 2 yards in half.)  Fold over the length of the fabric approximately 1-1 1/2 inches depending on the size of your elastic.  You’ll want it to be at least a 1/2 inch wider than the elastic.  After you sew the seam for the elastic, fold the fabric in half, seem side facing out, sew along the open end to close the skirt.  Tip: Using an iron to press the seam before sewing is so helpful in sewing a straight line.

Step 2:  Use a safety pin to easily guide the elastic through the fabric.  Once you have the elastic through the waistband, sew the ends of the elastic together.  Turn right side out.  At this point you can try on your child to determine the length you want.  To sew the hem use the same method of folding over and ironing before sewing.  You can also add lace to the bottom of the skirt after you’ve finished the hem.

Step 3:  To make the straps I used the leftover fabric from the hem of the skirt.  I wanted a 1-1/2 inch thick strap so I cut the fabric in 2 strips with a 3-1/2 inch thickness.  Fold in half lengthwise, iron crease and sew along one edge as well as the length of the fabric.  Turn right side out.  You can use your finger or a pencil to help.

Step 4: Measure the front of your child’s chest to figure out the width you need.  Fold the fabric in half so you have double thickness. Sew along the length of the fabric.  Slide straps in between the fabric.  Place a strap on each end of the fabric like shown above. Pin in place.  Sew along the edge of the fabric (width).  Turn right side out.

Once you’ve made the apron front and skirt the costume goes together quite easily.  (Note: I never sewed the apron front to the skirt.)  I used a long white t-shirt that my daughter already had and transformed an old pair of flats into ruby slippers.

  • Grilled Ballpark Franks by Hillshire Farms®
  • Hot Dog Buns
  • Grainy Mustard
  • Thin-sliced white or yellow onion
  • Thin-sliced dill pickles
  • Thin-sliced tomatoes
  • Avocado slices

Directions

Ball Park Franks

Grill Ballpark Franks until heated through and you can see char lines.

Open hot dog bun and put Ballpark Frank in bun.  Squeeze or spread a layer of mustard on one side of bun.  Add onion, pickle, tomato and avocado to side of hotdog and serve immediately.
