It’s back to school time and this year I decided to try a little something new and exciting to make the end of summer a little less painful for my crew. Heading back to school can be fun, but the end of summer is always made easier with something good to eat. So, this year we are heading back to school with homemade donuts. These cake donuts are great because they are baked, not fried and they are super moist and delicious. Since they are made with International Delight White Chocolate Mocha Creamer they have a really fabulous, rich flavor that is perfect for an early morning.

White Chocolate Mocha Donut Ingredients

For the Donut Batter

  • 6 TBS butter, softened
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1/3 cup white chocolate mocha creamer by International Delight
  • 1 1/4 cup flour
  • 1/2 cup granulated sugar
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup white chocolate chips

For the Crumb Topping

  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 2 TBS. ovaltine or other powdered chocolate mix
  • 1/4 tsp. salt
  • 1/4 cup butter, melted
  • 1 3/4 cups flour

White Chocolate Mocha Donut Instructions

To make the donut batter:

  1. Preheat oven to 325 degrees F.
  2. Whisk together the dry ingredients, except the white chocolate chips. Add in the butter and beat until the mixture is crumbly.
  3. In a small bowl, combine the eggs, vanilla extract and creamer. Mix until smooth.
  4. Add the wet ingredients to the dry, mixing until the batter smooth. Add the chocolate chips.
  5. Spoon the batter into the donut molds. Make sure each donut mold is about 1/2 full as you still have to add the crumble.

To make crumble:

  1. Add dry ingredients except flour and then pour the melted butter over the mixture and stir. Add flour gradually and mix.
  2. Spoon the crumb mixture over the top of each donut.
  3. Bake for about 13 minutes – longer if you have a deep donut pan.
  4. Be sure to let cool before removing from pan. Enjoy!

If you’re like me and planted way too much squash this summer then you’ll be looking for delicious ways to use them up.  I’ve roasted them, baked them and even barbecued them in addition to giving them away.  I thought I’d share with you one of my family favorites, Butternut Squash Au Gratin Recipe.  It’s so quick and easy you’ll be surprised in a really good way. Seriously!

Butternut Squash Au Gratin

Butternut Squash Au Gratin Ingredients

  • 2 butternut squash OR 1 butternut and 1 acorn squash
  • 1 tbls olive or vegetable oil
  • 1/2 onion, chopped
  • 2 tbls flour
  • 1 1/2 c. milk
  • salt & pepper
  • 3/4 c. panko bread crumbs
  • 2 tbls butter, divided
  • 1/4 c. parmessan cheese, freshly grated
  • Optional: fresh basil, chopped

Butternut Squash

Butternut Squash Au Gratin {recipe}

Ingredients
  • 2 butternut squash OR 1 Butternut and 1 acorn squash
  • ½ onion, chopped
  • 2 garlic cloves, crushed
  • 2 tbls flour
  • 1½ cup milk
  • 1 tbls olive oil
  • ¾ cup panko bread crumbs
  • ¼ cup parmesan cheese, freshly grated
  • 2 tbls butter, divided
  • Optional: fresh basil, chopped
Instructions
  1. Cut squash in half lengthwise, remove seeds and slice. Chop onion.
  2. Over medium heat, heat 1 tbls of olive oil, add squash, onion and garlic. Saute until squash is tender. Lightly season with salt and pepper.
  3. Remove from heat and place in casserole dish.
  4. In a small saucepan heat 1½ tbls butter and whisk in 2 tbls flour. Once blended slowly add 1½ cups milk. Whisk until thickened.
  5. Pour over squash in casserole dish. You can gently stir it if necessary.
  6. In microwave, melt ½ tbls butter, stir in panko bread crumbs and parmesan cheese. Sprinkle on top of casserole.
  7. Bake at 350 degrees for 25-30 minutes.
  8. Sprinkle chopped basil on top. Enjoy!

Motherhood has Helped to Make me Great!

Certainly, motherhood has helped to build my confidence.  Oh boy have I made mistakes and continue to do so, but each day I grow stronger in my role, and better, and that makes me feel great, even if I do have some off days.

I've also gotten pretty great at realizing that it doesn't really matter what other people think of me.  What really truly matters is whether I know that I have self worth.  That's big.  It took a lot of years to come to the realization, but it's life changing.

I'm also pretty darn fabulous at recognizing that for the most part, people treat you the way you allow them to.  That goes with children and pets as well as adults.  So, whenever I get talked to in a way that isn't appropriate, or treated in a way that I just plain don't like I have the ability to see that I have a role to play in the exchange.

Watermelon and Mint Infused Water Recipe

  • water
  • small watermelon slices {without rind}
  • mint leaves
  • cubed ice

Add all ingredients to mason jars or glasses and serve immediately.  I’ve seen many recipes on line that recommend infusing overnight.  I personally do not like my water infused over night.  Especially if the recipe calls for citrus.  I find that the fruit and / or vegetables become too water logged and or acidic when infused too long.

Shark Party Activities

coldstoneejpg Making Paper Plate Shark Jaws is a craft that is inexpensive and easy.  This craft is for your older kiddos.  I’d say the kids need to be at least six or seven since cutting through a paper plate takes some dexterity.  Grab a paper plate and some scissors and let your bigger kids make their own shark jaws.  If you have younger children, you can make their shark jaws for them and let them decorate them!  To make our shark jaws, we just folded our paper plate in half and then cut the teeth out of the middle of the plate. We also tried to shape the outside of the plate like a shark jaw based on pictures we found online.  The nice thing about this activity is that you can make it super simple with just scissors, or you can take it to the next level and paint or decorate the jaw! coldstonef Watch shark documentaries!  My boys adore watching shark documentaries, so grab some iPads or other hand held devices and let them watch some good shark shows while they EAT their SHARK spread.  The nice thing about this activity is that you can tailor what they watch to the age so that it’s age appropriate.  Plus, if you find some good documentaries or movies, your kids could be entertained for quite some time…..{smiling}. coldstoneg It’s easy and inexpensive to celebrate Shark week starting on August 10th at 9/8c on the Discovery Channel™.  I love that Cold Stone and Cold Stone Discovery™ have come together to bring us another exciting summertime promotion for Shark Week! How to Make this 30 Second Ice Cream Sandwiches Recipe is a snap.  Seriously, if you are wanting a quick treat for your kiddos this summer, or are having a party, I highly recommend trying these easy, peasy ice cream sandwiches.  You can serve them right away, or prepare them ahead of time and freeze them until the event.  They are so easy that the kids can even make their own.  Double score!

30 Second Ice Cream Sandwich Ingredients:

The ingredient list is pretty simple.  THREE things:

  • Chewy Chocolate chip cookies {two per sandwich}
  • Cookie dough ice cream {or any flavor you like}
  • Mini chocolate chips {or you can use sprinkles}

Instructions:

Step 1:  Put a scoop of ice cream between two cookies.  Press together.  Roll in mini chocolate chips.

Step 2:  Eat immediately, or immediately freeze for later.

Step 3:  ENJOY!

Yummy Guacamole Recipe

Ingredients:

  • 2 ripe avocado
  • 2 cloves of garlic
  • 1 tsp Mrs Dash Extra Spicy Seasoning
  • handful of chopped cilantro
  • 1 finely chopped jalapeño
  • 1 finely chopped tomato
  • juice from half a lemon

Step 1:  Finely dice tomato and jalapeño.  Rinse and chop cilantro.  Set aside.

Step 2:  Mash avocados and add minced garlic, Mrs. Dash, and lemon juice.  Stir together.

Step 3: Add tomato, jalapeño, and cilantro to avocado mixture.

Step 4: Add extra seasoning to taste.  Enjoy with tortilla chips,  fresh vegetables or as a topping on tacos or burritos!
