One of the things I love most about this time of year is FUDGE! One of the best things about fudge is that just about everyone loves it, and it makes the BEST friend and/or neighbor gift. Plus, there are so many ways you can make fudge variations for a sweet palette adventure. I adore gingerbread, and wanted to experiment with making an EASY Gingerbread Fudge Recipe so I pulled out my Gingerbread Latte Creamer by International Delight and voila, this recipe was born. It’s creamy, sweet and just plain delicious. Here’s what’s to like about the recipe: it’s super easy to make, it only uses a few ingredients and the gingerbread crumbles on the top add a nice texture and spice that makes it extra delicious. I highly recommend this recipe for gift giving! Don’t forget to download and print out the FREE printable, too!

Gingerbread Fudge Ingredients

  • 2 cups granulated white sugar
  • 1/2 cup butter
  • 3/4 cup Gingerbread Latte Creamer by International Delight
  • 10.5 ounces white chocolate almond bark (chopped into small pieces)
  • 1/2 teaspoon of nutmeg
  • (1) 7-ounce jar marshmallow creme
  • 1 cup of finely ground ginger snaps

Gingerbread Fudge Instructions

1. Line an 8 or 9-inch square pan with foil and let it hang over the sides. Spray with non stick spray.

2. In a saucepan combine sugar, butter and creamer. Bring to a boil, stirring constantly. Continue boiling 8 to 10 minutes over medium heat or until a candy thermometer reaches 234°F, stirring constantly to prevent scorching. Remove from heat.

3. Using a wooden spoon, work quickly to stir in chopped white chocolate and nutmeg until chocolate is melted and smooth. Stir in marshmallow creme. Beat until well blended and then pour into prepared pan. Top with ginger snap crumbs. Let stand at room temperature until cooled. Refrigerate if you’d like to speed up the process.

4. When completely cool, cut into squares. Store in a covered container.

How to Make an Overnight French Toast Casserole is pretty darn simple.  The best part, of course about overnight casseroles is that all the prep is done the night before so in the morning all you have to do is pop the casserole in the oven and serve.  The great thing about this Recipe is that is makes great left overs.

Overnight French Toast Casserole Ingredients

  • 1 loaf cubed French Bread
  • 3 TBS granulated sugar
  • 1 TBS cinnamon
  • 1/2 cup brown sugar
  • 1 cube butter (1/4 cup)
  • 3 TBS light corn syrup
  • 8 oz. cream cheese
  • 2 cups of International Delight® French Vanilla Creamer
  • 6-8 eggs, depending on how eggy you like your casserole

Directions {Step-by-Step}

Step 1:  Melt corn syrup, brown sugar and butter in sauce pan over medium low heat.  Stir constantly.

Step 2:  Pour into the bottom of a 9×13 casserole dish.

Step 3:  Cut a loaf of French bread into bite sized pieces.  Cut cream cheese into small cubes.  {You want to make sure they are small enough to spread all over the casserole.}

Step 4:  Place bread cubes/pieces over butter/sugar mixture in the 9×13 dish.  Evenly distribute cream cheese cubes over the bread.

Step 5:  Whisk eggs together and then add the International Delight French Vanilla Cream {or get creative and use another flavor of your choosing}, mixing together well.  Pour over bread, covering completely.  Press down to make sure bread pieces are completely “wet”.  Sprinkle with cinnamon and sugar mixture.  Cover and refrigerate over night.

How to make a Dorothy Costume is an easy craft that’s perfect for dress up and Halloween costumes!  I do not claim to be a seamstress by any means, but if you can sew a straight line like me then you can definitely sew this costume.  All you need is a plain white t-shirt, blue gingham fabric, sewing machine, elastic and pins.  I guarantee your child will be skipping with delight in this Dorothy Wizard of Oz costume!

Materials Needed for Dorothy Costume

  • Blue Gingham Fabric, 1-2 yards
  • Pins
  • Elastic
  • Sewing Machine
  • Iron
  • Note: Fabric, pins and elastic were purchased from Hobby Lobby.

Step-by-step Directions

Step 1:  Cut fabric in half lengthwise.  (I bought 2 yards of fabric and cut the entire 2 yards in half.)  Fold over the length of the fabric approximately 1-1 1/2 inches depending on the size of your elastic.  You’ll want it to be at least a 1/2 inch wider than the elastic.  After you sew the seam for the elastic, fold the fabric in half, seem side facing out, sew along the open end to close the skirt.  Tip: Using an iron to press the seam before sewing is so helpful in sewing a straight line.

Step 2:  Use a safety pin to easily guide the elastic through the fabric.  Once you have the elastic through the waistband, sew the ends of the elastic together.  Turn right side out.  At this point you can try on your child to determine the length you want.  To sew the hem use the same method of folding over and ironing before sewing.  You can also add lace to the bottom of the skirt after you’ve finished the hem.

Step 3:  To make the straps I used the leftover fabric from the hem of the skirt.  I wanted a 1-1/2 inch thick strap so I cut the fabric in 2 strips with a 3-1/2 inch thickness.  Fold in half lengthwise, iron crease and sew along one edge as well as the length of the fabric.  Turn right side out.  You can use your finger or a pencil to help.

Step 4: Measure the front of your child’s chest to figure out the width you need.  Fold the fabric in half so you have double thickness. Sew along the length of the fabric.  Slide straps in between the fabric.  Place a strap on each end of the fabric like shown above. Pin in place.  Sew along the edge of the fabric (width).  Turn right side out.

Once you’ve made the apron front and skirt the costume goes together quite easily.  (Note: I never sewed the apron front to the skirt.)  I used a long white t-shirt that my daughter already had and transformed an old pair of flats into ruby slippers.

How to Make and serve Chicago Style Hot Dogs is so easy you really shouldn’t tell anyone how little effort you actually put into the meal.  {{smiling}}  The great thing about this Recipe is that you can serve it for lunch or dinner and it looks really appetizing.   Plus, it is quite filling and a great way to add protein to your meal.  If one hot dog isn’t enough for someone, well, they can have more than one!  Easy Peasy.  I’m a huge fan of avocado, so I’ve added it to my recipe creation that was sponsored by Hillshire Brands™  as part of the Mom It Forward Blogger Network.  I’m pretty sure Chicago-style hot dogs don’t really contain avocado.

  • Grilled Ballpark Franks by Hillshire Farms®
  • Hot Dog Buns
  • Grainy Mustard
  • Thin-sliced white or yellow onion
  • Thin-sliced dill pickles
  • Thin-sliced tomatoes
  • Avocado slices

Directions

Grill Ballpark Franks until heated through and you can see char lines.

Open hot dog bun and put Ballpark Frank in bun.  Squeeze or spread a layer of mustard on one side of bun.  Add onion, pickle, tomato and avocado to side of hotdog and serve immediately.

  • 1 bag (15 oz) white chocolate chips

We have this love in our house of Tres Leche desserts. The love might stem from the fact that we always eat Tres Leche OUT. I never make it at home, so it’s a special treat. However, this week that all changed and to tell you the truth, I’m not positive that’s a good thing. I decided to make a modified recipe of one that was created by Little Inspiration {that should be illegal it’s so delicious, by the way} and I’ve pretty much been in heaven ever since. I made several modifications, but,the biggest was to use International Delight Pumpkin Pie Spice Creamer for Evaporated Milk in the Tres Leche. It’s just sinful to combine 3 types of milky goodness with pumpkin in a cupcake and hope to not be completely addicted. However, if you want to serve a cupcake that will have your family or guests swooning, this Fall Tres Leche Pumpkin Cupcake recipe is for you!

Tres Leche Pumpkin Cupcakes

Tres Leche Pumpkin Cupcake Ingredients

For the cupcake batter:

  • Yellow cake mix (any brand will do)
  • 1 (15 oz) can of pumpkin
  • 3 eggs
  • 1 1/2 cup of almond milk
  • 1/3 cup of melted butter
  • 1 tsp cinnamon
  • 1 tsp of pumpkin pie spice

For the Tres Leche:

Combine all of the ingredients listed for the cupcake batter in a large bowl and mix well.

Bake as directed on box or until tooth pick inserted into cupcake comes out clean. My cupcakes took a little longer to cook than the recommended baking time.

Let cupcakes cool and then poke holes in cupcakes with fork.

Prepare Tres Leche by combining all of the milks listed and mixing well.

Spoon over cupcakes LIBERALLY. Refrigerate overnight.

Serve immediately with whipped topping (or the whipped topping will melt). I also sprinkled with cinnamon.

If you love Chicken and Hot Sauce, you are going to adore this recipe for making Texas Pete® Sultry Grilled Chicken.  Made with either boneless chicken tenders or thighs, this grilled chicken recipe uses Texas Pete Hot Sauce as an ingredient, not a condiment, insuring that your recipe is memorable as well as tasty!  The chicken dish has to marinade for 48 hours, so you need to prepare ahead, but the grilled results are worth it!

Texas Pete® Sultry Grilled Chicken Ingredients

  • 2 1/2 cups Texas Pete®Original Hot Sauce
  • 2 Tbsp Finely chopped garlic
  • 4 oz. Olive oil
  • 1 tsp Kosher salt
  • 1 tsp Pepper
  • 2 lbs. Boneless chicken tenders or Thighs
  • 2 Tbsp Olive oil
  • 2 Tbsp Chopped garlic
  • 2 – 26 oz. jars Marinara sauce (prepared)
  • 3/4 cup Texas Pete®Original Hot Sauce
  • 2 cups Kalamata olives, drained, roughly chopped
  • 3 Tbsp Red wine vinegar
  • 1 tsp Pepper
  • For garnish Chopped fresh parsley

Directions

  •  Combine Texas Pete® Original Hot Sauce, 2 tbsp. chopped garlic, 1/4 cup olive oil, 1 tsp kosher salt and 1 tsp pepper for marinade.
  • Place chicken in large, sealable container or bag. Add marinade and allow to coat.
  • Refrigerate 48 hours.
  • Drain chicken before cooking. Discard marinade.
  • Grill chicken until internal temperature reaches 165 degrees. Alternatively, bake chicken at 400 degrees for 40 to 50 minutes or until internal temperature reaches 165 degrees.
  • To make sauce, saute garlic in olive oil until fragrant. Add 2 tbsp olive oil, 2 tbsp chopped garlic, marinara sauce, 3/4 cup Texas Pete® Original Hot Sauce, 2 cups olives, 3 tbsp red wine vinegar and 1 tsp pepper.   Simmer for 15 minutes to allow flavors to blend. Top cooked chicken with sauce. Garnish with chopped parsley.

  • Use greening pins to secure feathers and pumpkins to feather wreath.  I used toothpicks to attach the skull.
