Butternut Squash Au Gratin {recipe}

If you’re like me and planted way too much squash this summer then you’ll be looking for delicious ways to use them up.  I’ve roasted them, baked them and even barbecued them in addition to giving them away.  I thought I’d share with you one of my family favorites, Butternut Squash Au Gratin Recipe.  It’s so quick and easy you’ll be surprised in a really good way. Seriously!

Butternut Squash Au Gratin Ingredients

  • 2 butternut squash OR 1 butternut and 1 acorn squash
  • 1 tbls olive or vegetable oil
  • 1/2 onion, chopped
  • 2 tbls flour
  • 1 1/2 c. milk
  • salt & pepper
  • 3/4 c. panko bread crumbs
  • 2 tbls butter, divided
  • 1/4 c. parmessan cheese, freshly grated
  • Optional: fresh basil, chopped

Ingredients
  • 2 butternut squash OR 1 Butternut and 1 acorn squash
  • ½ onion, chopped
  • 2 garlic cloves, crushed
  • 2 tbls flour
  • 1½ cup milk
  • 1 tbls olive oil
  • ¾ cup panko bread crumbs
  • ¼ cup parmesan cheese, freshly grated
  • 2 tbls butter, divided
  • Optional: fresh basil, chopped
Instructions
  1. Cut squash in half lengthwise, remove seeds and slice. Chop onion.
  2. Over medium heat, heat 1 tbls of olive oil, add squash, onion and garlic. Saute until squash is tender. Lightly season with salt and pepper.
  3. Remove from heat and place in casserole dish.
  4. In a small saucepan heat 1½ tbls butter and whisk in 2 tbls flour. Once blended slowly add 1½ cups milk. Whisk until thickened.
  5. Pour over squash in casserole dish. You can gently stir it if necessary.
  6. In microwave, melt ½ tbls butter, stir in panko bread crumbs and parmesan cheese. Sprinkle on top of casserole.
  7. Bake at 350 degrees for 25-30 minutes.
  8. Sprinkle chopped basil on top. Enjoy!
