If you love Rice Krispies, marshmallows, white chocolate, and peanut butter, then you’ll adore avalanche bars. Made famous by the Rocky Mountain Chocolate Company, this dreamy treat is super popular around the holidays. The nice thing about the recipe is that you really can’t mess it up. You can add extra peanut butter and white chocolate to make the bars a little creamier and you can use sprinkles or mini M&M’s for garnish instead of the mini chocolate chips.

Avalanche Bar Ingredients:
- 2 bags of white chocolate chips (24 oz.)
- 1/2 cup creamy peanut butter
- 6 cups Rice Krispie cereal
- 3 cups mini marshmallows
- 1/2 cup mini chocolate chips plus a handful for garnish
Avalanche Bar Directions:
- Spray cooking spray in a 9X13 baking dish.
- In microwave-safe bowl pour in white chocolate chips and heat on 50% power for 1 minute. Stir and continue in 30 second increments until chips are melted.
- Add the peanut butter to the melted chocolate and stir until smooth.
- Add the Rice Krispies to a large bowl and then gently toss the peanut butter mixture with the Rice Krispies until completely coated.
- Stir every few minutes until mixture is cool, about 10-15 minutes.
- Add the marshmallows and the mini chocolate chips and stir to combine. (do not add before the mixture is cool or they’ll melt.)
- Pour mixture into the baking dish and spread evenly. Do not compact.
- Sprinkle mini chocolate chips on the top for garnish.
- Cut treat into squares and serve.
